Know Your Spices - Nigella Seeds or Kalonji

Kalonji or Nigella Seeds

Nigella Seeds are tear-drop, native to south and southwest Asia, comes from an annual flowering plant that belongs to the onion family. It is believed that drinking half a teaspoon of Kalonji oil will help cure most chronic ailments!! The black seeds taste like a combination of onions, black pepper, and oregano. They have a pungent, bitter taste and smell.
The dry-roasted seeds flavor curries, vegetables, and pulses. In some cultures, the black seeds are used to flavor bread products, and are used as part of the spice mixture panch phoron (meaning a mixture of five spices) in Bengali cuisine. Nigella is also used in Armenian string cheese, a braided string cheese called majdouleh or majdouli in the Middle East.

The flowers are dried and each petal gives a few seeds. And kalonji isn't just valuable for its taste-enhancing features. It's a remedy for everything from headaches and congestion to infections!
